These lettuce wraps are light, vibrant, and endlessly customizable. They’re a playful way to eat more veggies, and the ginger-lime flavor brings everything to life. Perfect for a hands-on dinner, a picnic snack, or a summer gathering where everyone assembles their own.
Ingredients:
For the wraps:
1 head of lettuce (red leaf, green leaf, or mixed), leaves gently separated and washed
1 medium carrot, shredded or julienned
1 small beet, shredded or spiralized
1 cup kale, chopped finely
1/2 cucumber, sliced thin or cut into matchsticks
Optional Filling Add-ons:
Cooked rice noodles
Tofu or tempeh
Sliced avocado
Grilled or shredded chicken, thinly sliced steak, or flaked baked salmon
For the ginger-lime sauce:
1 1/2 tbsp lime juice
1 tbsp soy sauce or tamari
1 tbsp sesame oil
1 tsp rice vinegar
1 tsp honey or maple syrup
1 tsp grated fresh ginger
1 small clove garlic, minced
Chili flakes or sriracha (optional, to taste)
Instructions:
Prepare all the vegetables and optional fillings and lay them out assembly-style.
Whisk together the sauce ingredients in a bowl or shake them up in a jar.
Assemble the wraps by filling each lettuce leaf with a small handful of veggies (and noodles or protein, if using).
Drizzle with ginger-lime sauce and roll or fold like a taco. Eat immediately!
