  • 1 small beet, shredded or spiralized

  • 1 cup kale, chopped finely

  • 1/2 cucumber, sliced thin or cut into matchsticks

Optional Filling Add-ons:

  • Cooked rice noodles

  • Tofu or tempeh

  • Sliced avocado

  • Grilled or shredded chicken, thinly sliced steak, or flaked baked salmon

  • 1 tbsp sesame oil

  • 1 tsp rice vinegar

  • 1 tsp honey or maple syrup

  • 1 tsp grated fresh ginger

  1. Prepare all the vegetables and optional fillings and lay them out assembly-style.

  2. Whisk together the sauce ingredients in a bowl or shake them up in a jar.

  3. Assemble the wraps by filling each lettuce leaf with a small handful of veggies (and noodles or protein, if using).
