Cucumber Yogurt Dip with Fresh Herbs

Cool, creamy, and endlessly versatile, this cucumber yogurt dip is a summertime staple. Inspired by tzatziki, it’s perfect as a dip, a sauce for grilled veggies or meats, or a spread for sandwiches. It’s also one of the easiest ways to enjoy the crisp freshness of your CSA cucumbers.

Ingredients:

  • 1 large cucumber, grated or finely diced

  • 1 cup plain yogurt (Greek or plant-based)

  • 1 tbsp olive oil

  • 1 clove garlic, finely grated or minced

  • 1 tbsp lemon juice

  • 1–2 tbsp chopped fresh herbs (dill, mint, or parsley work beautifully)

  • Salt & pepper, to taste

Optional Add-ons:

  • Drizzle of honey for a slightly sweet contrast

  • Pinch of cumin or sumac for depth

  • Crumbled feta or labneh swirl

Instructions:

  1. Grate or finely dice the cucumber. If it’s very watery, squeeze out excess moisture using a clean towel or paper towel.

  2. In a bowl, combine yogurt, olive oil, garlic, lemon juice, and herbs.

  3. Stir in the cucumber and mix well. Add salt and pepper to taste.

  4. Chill for at least 15–30 minutes before serving to let the flavors meld.
