Chopped Lettuce Bowl with Creamy Herb Dressing
Sometimes what you need is a big, crunchy, satisfying bowl of greens. This chopped summer lettuce bowl makes the most of your CSA’s leafy bounty—add in a rainbow of veggies, a creamy herb dressing, and any toppings you like. It’s unfussy, endlessly flexible, and full of garden goodness.
Ingredients:
For the bowl:
1 head CSA lettuce (any variety), chopped into bite-sized pieces
1 small carrot, shredded
1/2 cucumber, diced
1 small beet, grated or thinly sliced
1 handful kale, finely chopped (optional)
1–2 radishes, thinly sliced (optional)
Sunflower seeds or toasted nuts
Crumbled feta or goat cheese (optional)
For the creamy herb dressing:
1/2 cup plain yogurt or sour cream (dairy or plant-based)
1 tbsp olive oil
1 tbsp lemon juice or apple cider vinegar
1 tbsp chopped fresh herbs (dill, parsley, or chives)
Salt & pepper, to taste
Splash of water to thin, if needed
Optional Protein Add-Ons:
Grilled chicken or salmon
Hard-boiled egg
Crispy chickpeas or tempeh
Instructions:
Wash, dry, and chop all veggies. Arrange them in a large bowl or divide between individual serving bowls.
In a jar or small bowl, whisk together the dressing ingredients. Taste and adjust seasoning.
Drizzle dressing over the veggies and toss gently.
Add seeds, cheese, and protein if using. Serve immediately.
